This recipe is packed full of flavour, it’s easy to make and is Seriously delicious!
Cumberland sausages |

1. Heat oven to Mark 6/200°C. Fry the sausage, onion, pepper and chilli in the oil for 5-10 mins until browned.
2. Add the kidney beans and sprinkle over the Cajun spice; stir well to combine and cook for 5 mins more.
3. Then divide the sausage mixture between the the wraps. Roll the wraps up and put in an ovenproof dish. Scatter with the cheese and bake in the oven for 20 mins.
4. Mix the tomatoes, avocado and lime together and season. Spoon the salsa over the enchiladas to serve.
